Peach, Apple And Custard Brown Betty

6 slices fruit bread, chopped
¹⁄³ cup brown sugar
¹⁄³ cup desiccated coconut
½ teaspoon mixed spice
400g can sliced pie apples
410g can sliced peaches, drained
1 cup thick vanilla custard
40g butter, finely chopped
Icing sugar mixture, for dusting
Honey, caramel and macadamia ice-cream, to serve
1. Preheat oven to
200°C/180°C fanforced. Grease a 2-litre (8-cup-capacity) rectangular roasting
2. Process bread in
a food processor until coarse breadcrumbs form. Add sugar, coconut and mixed
spice. Process for 10 seconds or until combined.
3. Sprinkle ½ the
breadcrumbs over base of prepared dish. Top with apples and peaches. Dollop
spoonfuls of custard evenly over fruit. Sprinkle with remaining breadcrumbs.
Scatter evenly with butter.
4. Bake for 25 to
30 minutes or until breadcrumbs are crisp and golden. Dust with icing sugar.
Serve with ice-cream.
