Caramelised onion

 

Makes 1½ cups

Prep 10 minutes

Cook 30 minutes (plus cooling time)

 

Ingredient

2 tablespoons extra virgin olive oil

3 large brown onions, halved, thinly sliced

¹⁄³ cup brown sugar

¼ cup red wine vinegar

2 teaspoons fresh thyme leaves

 

Recipe

1.    Heat oil in a large frying pan over medium-low heat. Add onion. Cook, stirring occasionally, for 15 minutes or until onion is softened but not browned.

2.    Add sugar, vinegar and thyme. Cook, stirring occasionally, for 10 to 15 minutes or until mixture thickens and caramelises. Set aside to cool completely. Serve.
