In season peaches
Biting into a juicy peach is one of the
pleasures of warmer weather, and their fragrant flesh marries well with both Savoury
and Sweet flavors. Vanilla or almond flavors – such as marzipan or Amaretto –
will wake up the peachiness, whereas the fruit’s texture and sublime juiciness
make it a natural foil for salty cured meats such as Parma ham and chorizo.
Choose unblemished, perfectly fuzzed fruit that gives when gently pressed. Why
not try this sublime griddled dessert for a true taste of summer? Halve and
remove the stones from 4 peaches. Pat the cut sides dry, then brush with
vegetable oil. Heat a griddle pan and cook the peaches (cut-side down) until
charred lines appear. Carefully pour over 4tbsp Amaretto and bubble for 30 sec.
transfer the peaches to serving plates; add a splash of water to the pan, then
pour syrup over the peaches. Meanwhile, Stir together 200 g (7oz) extra thick
Greek yogurt, the seeds from one vanilla pod and 50 g (2oz) sifted icing sugar.
Serve with the peaches. Serves 4.
