Pepper & sesame-crusted salmon with mint peas

Skinless salmon
fillets
Ingredient

2 tablespoons sesame seeds
·
1-2 teaspoons finely cracked black pepper
·
4 x 150g skinless salmon fillets
·
1 cup frozen peas
·
250g green beans, trimmed, sliced
·
1 small red onion, finely sliced
·
½ cup torn mint leaves
·
40g reduced-fat feta, crumbled
·
Lemon wedges, to serve
Recipe
1. Combine sesame
seeds and pepper on a sheet of baking paper. Press salmon fillets into seed
mixture to coat on all sides.
2. Spray a large
non-stick frying pan with olive oil and set over high heat. Add salmon and cook
for 2-3 minutes per side, or until golden and just cooked through. Remove pan
from heat, cover to keep warm and set aside.
3. Place peas and
green beans in a medium heatproof bowl and cover with boiling water. Leave to
stand for 2 minutes; drain.
4. Combine peas and
green beans with onion, mint and feta in a large bowl. Divide mint peas among
serving plates, top each with a reserved salmon fillet, and serve with lemon
wedges.
