Citrus Seaweed salad

Serves: 2 (as a side salad)

Nutrients per sewing: 217 calories, 7g protein, 14g carbohydrate (14g sugar), 15g fat (2.5g saturated), 8g fibre, 1.9g salt


·         30g wakame seaweed

·         1 grapefruit, segmented

·         1 orange, segmented

·         40g cucumber, chopped into thin cubes

·         1 spring onion, finely sliced

·         20g dill, roughly chopped

·         1 tbsp sesame seeds

·         2 tbsp Asian dressing


·         To make the Asian dressing, blitz in afood processor 1 tsp chopped lemongrass, 1 tsp chilli, 1/8 tsp black onion seed, 1 lime leaf, 2 tbsp olive oil, 1 tbsp tamari, 1/2 tsp coconut palm sugar, 1 slice root ginger, 1 sprig coriander, 1 tbsp sesame oil, 1 tbsp water, 1 tbsp water, 1/2 clove garlic.

·         Soak the seaweed in warm water for 15 minutes. Drain, then cut the stalks off and slice into 1cm wide strips. Combine all the ingredients and

·         Use your hands to mix together.
