Quinoa and broccolini fried rice

Ingredient

1 tablespoon rice bran oil
·
1 red capsicum, thinly sliced
·
2 celery stalks, sliced diagonally
·
2 bunches broccolini, trimmed, sliced diagonally
·
2cm piece fresh ginger, peeled, cut into thin
matchsticks
·
2 garlic cloves, crushed
·
2 long red chillies, sliced
·
¼ cup soy sauce
·
2 tablespoons Chinese rice wine
·
½ teaspoon sesame oil
·
2 x 250g packets microwave rice and quinoa mix
·
2 green onions, thinly sliced diagonally
Broccolini
Recipe

Heat a wok over high heat. Add oil. Swirl to
coat. Add capsicum, celery and broccolini. Stir-fry for 2 to 3 minutes or until
capsicum starts to soften. Add ginger, garlic and chilli. Stir-fry for 30
seconds or until fragrant.

Meanwhile, combine soy sauce, rice wine and
sesame oil in a jug.

Add rice mix to wok. Stir-fry, breaking up any
lumps, for 2 to 3 minutes or until heated through. Add sauce mixture and green onions
to wok. Stir-fry until combined. Season with salt and pepper. Serve.
