A vegetarian version of Sloppy Joes

1 cup
chopped green onions
1 cup
chopped red, yellow, and/or orange bell peppers
1 Tbsp.
garlic paste
1 lb.
ground turkey
1 can (14.5 oz.) fire-roasted diced tomatoes
2 Tbsp.
Worcestershire sauce
1 chipotle chile in adobo sauce, chopped

cornbread or 4 toaster corncakes, halved

wine vinegar

chopped fresh cilantro
1. In large nonstick skillet on
medium-high, heat oil. Add onions and bell peppers; cook 2 minutes, stirring
constantly. Add garlic paste and cook 1 minute, stirring constantly.
2. Add turkey; cook3 minutes, breaking
it up with wooden spoon, stirring until no longer pink. Add tomatoes and their
juices, Worcestershire, chipotle chile, and ½
teaspoon salt. Reduce heat to medium and cook, covered, 3 minutes.
3. Toast cornbread or corncakes.
4. Stir vinegar and cilantro into
cooked turkey mixture.
5. Spoon half of the Sloppy Jane
mixture over 4 slices cornbread, dividing evenly. Repeat with remaining Sloppy
Jane mixture and cornbread.
