Ingredients

Butter cake mix, 340g packet
·
Frozen puff pastry, 5 ½ sheets
·
Raspberry jam, 1 cup
·
Icing sugar, for dusting
Directions
- Preheat oven to
hot, 2000C
- Prepare cake
following packet instructions
- Using a 6.5cm
round cutter, cut discs from pastry, reserving offcuts
- Line four
12-hole patty pans with pastry. Place 1 teaspoon jam into each pastry
case. Cover with a tablespoon of cake batter.
- Using reserved
pastry cut 1.5cm circles and place one on top of each patty cake.
- Bake 12 – 15
minutes, until puffed and golden. Allow to cool in pans. Dust with icing
sugar to serve.

Ingredients

Brown sugar, 1/3 cup
·
Butter, 30g
·
Golden syrup, 1 tablespoon
·
Mixed dried fruit, 375g packet
·
Mixed spice, 1 teaspoon
·
Nutmeg, ½ teaspoon
·
Butter cake mixture, 340g packet
·
Flaked almonds, 100g packet
·
Icing
·
Icing sugar, ½ cup, sifted
·
Hot water, 2 – 3 teaspoons
·
Pink food coloring (optional)
Directions
- Preheat oven to
moderate, 1800C. Lightly grease and line a 20cm x 30cm slice
pan with baking paper.
- In a medium
saucepan, combine sugar, butter and syrup. Stir over medium heat until
sugar dissolves. Add fruit and spices. Bring to the boil. Remove from
heat, cool 10 minutes
- Prepare packet
cake following packet instructions. Spread evenly in pan. Sprinkle over
fruit mixture and top with almonds. Bake 25 – 30 minutes. Allow to cool in
pan 10 minutes before transferring to a wire rack to cool completely
- Icing. In a
small bowl, combine icing sugar and water. Add a few drops pink food
coloring. Drizzle icing over cooled slice.
- Cut slice into
squares to serve. Store in an airtight container
