Black Bean And Quinoa Chilli
Ingredients
·
5 ½ cups black beans, rinsed
·
1 cup quinoa, rinsed and unco
·
3 cups vegetable stock
·
2 cups water
·
½ cup sweet corn, rinsed
·
½ cup diced tomatoes
·
1 green pepper, chopped
·
½ medium onion, chopped
·
1 cinnamon stick
·
2 tbsp chilli powder
·
1 tsp cumin powder
·
1 tsp onion powder
·
½ tsp ground pepper
·
½ tsp sea salt
·
¼ cup green onions, choppe
·
2 avocados, sliced
Method
1. In a large pot
combine all the ingredients.
2. Turn heat to
medium/high and bring to the boil.
3. Cover and let
simmer on low heat for about an hour.
4. Serve with diced
green onions and avocado.
