¹⁄³ cup honey
·
½ cup orange juice
·
1 sprig fresh rosemary, leaves removed
·
2 medium navel oranges
·
400g madeira cake
·
Whipped cream, to serve
Recipe
1. Combine honey,
orange juice, ¼ cup cold water and rosemary leaves in a small saucepan over
medium heat. Bring to a simmer, stirring occasionally. Simmer for 2 minutes.
2. Meanwhile, using
a small knife, remove rind and pith from oranges. Cut down either side of
membrane to release orange segments.
3. Cut cake into 8
x 1cm-thick slices. Place on a microwave-safe plate. Microwave on HIGH (100%)
for 30 to 40 seconds or until cake is warm to touch.
4. Place cake
slices on serving plates. Drizzle with ½ the syrup. Serve cake warm with
remaining syrup, orange segments and cream.
