think steak and eggs, wine and cheese and put our own Pinoy-Inspired spin on
them. The result? Six delicious dishes with flavors, that’ll dance away on your
taste buds.
Roasted Tomato and Ginger soup

more comforting than a warm bowl of soup. Try this one – the flavors of roasted
tomatoes and ginger make it a winner!
Roasted Tomato and Ginger soup

§ 700 grams ripe native tomatoes, sliced and seeded
§ 4 tablespoons olive oil, divided
§ Salt and pepper
§ 1 medium onion, minced
§ 1 tablespoon minced ginger
§ 2 cloves garlic, minced
§ 2 sprigs thyme
§ 2 bay leaves
§ 1 tablespoon tomato paste
§ 2 tablespoons balsamic vinegar
§ 700 ml water or chicken stock
§ Sugar (optional)
1. Preheat oven to 3900F.
2. Place tomatoes on a baking sheet.
Season with 2 tablespoons olive oil, salt, and pepper. Roast for 20 minutes in
preheated oven.
3. In a pan, sauté onions, ginger, and
garlic in remaining olive oil. Add thyme, bay leaves, and tomato paste; sauté
until very fragrant.
4. Add roasted tomatoes, balsamic
vinegar, and water or chicken stock. Season with salt, pepper and sugar, if
desired. Bring to a boil and simmer for 15 minutes. Remove from heat and remove
bay leaves.
5. Purée in a blender until desired consistency
is attained. Season to taste.
Grilled Kesong Puti Sandwich
With gooey
cheese and a yummy Malunggay spread, this grilled sandwich is perfect for
dunking into the Roasted Tomato and Ginger Soup. You’ll get layer upon layer of
flavors and textures!
Grilled Kesong Puti Sandwich

- ¼ cup malunggay leaves
- 1 clove garlic, minced
- 3 to 4 tablespoons olive oil, divided
- Salt and pepper
- 2 large tomatoes, sliced into rounds
- 240 grams kesong puti, sliced thinly
- 4 slices while wheat or white bread
1. In a blender, blend together
malunggay, garlic, and 2 to 3 tablespoons olive oil to form a paste. Season
with salt and pepper.
2. Place tomato and cheese slices on
top of 2 bread slices.
3. Spread malunggay paste on remaining
bread slices and place, malunggay side down, on top of tomatoes and cheese.
4. Brush a Panini press or nonstick
pan with remaining oil. Grill sandwiches until bread is golden and cheese has
softened.
Tip
Go ahead
and add some sun-dried tomatoes into the soup mix while simmering. This will
create a more intense flavor. You can also sub the kesong puti with gruyère
cheese to get a nuttier, sharper taste.
