1 tablespoon instant coffee granules

½ cup Irish whiskey
·
1 ½ tablespoons caster sugar

½ cup thickened cream, whipped
·
Pinch ground nutmeg
Dissolve coffee in 1½ cups boiling water. Add whiskey and
sugar; stir to dissolve. Pour into 2 x 2-cup heatproof serving glasses. Top
with cream. Serve sprinkled with nutmeg

2 eggs, lightly whisked

2 tablespoons caster sugar
·
1 ½ cups milk
·
1 teaspoon rum essence
·
1 teaspoon brandy essence
·
70g white eating chocolate, finely chopped
·
Chocolate-coated wafer sticks, to serve
Combine egg, sugar and milk in a small saucepan over
moderately low heat. Cook and stir for 6 minutes or until mixture is thick
enough to coat the back of a spoon. Remove from heat. Add essences and white
chocolate; stir until melted and smooth. Pour into 2 x 1¼-cup heatproof cups.
Serve with a wafer stick.
