Whether you’re BBQ-ing, picnicking or just lounging in the garden, here are some brilliant recipes to enjoy outdoors, all summer long

Double-swiss and green chilli relish burgers

Double-swiss and green chilli relish burgers

·         20 minutes

·         Makes 8

·         Easy

Ingredient

·         Beef mince 750g

·         Red onion 1, peeled and grated

·         flat-leaf parsley a good handful, chopped

·         Breadcrumbs a good handful

·         Egg 1

·         Dijon mustard 1 tbsp

·         Oil for frying

·         Emmenthal 16 slices

·         Soft lettuce to serve

·         Tomato slices to serve

·         Crusty rolls 8, split and toasted

·         RELISH

·         Cornichons 10, finely diced

·         Green chilles 2, seeded and finely diced

·         Onion ¼, finely diced

·         flat-leaf parsley 1 tbsp of finely chopped

·         White wine vinegar 2 tsp

·         Golden caster sugar ½ tsp

Recipe

1.    Mix all the relish ingredients together with a splash of olive oil and leave it to one side while you make the burgers.

2.    Mix the mince, onion, parsley, breadcrumbs, egg and mustard and season. Divide into 16 and form into flat burgers (they will shrink and pull up when cooking so make them flatter than you want them to end up). Heat a barbecue, griddle or heavy frying pan. Brush the burgers with oil then cook them for 3-4 minutes on each side until cooked through. Add a slice of cheese to each then let the heat melt the cheese a little.

3.    Put some lettuce and tomato on the bottom of each bun. Sit two burgers on top then a spoonful of the relish. Skewer to secure.
