Butter 150g
•
Onions 3 large, peeled, halved and finely
sliced
•
filo pastry 250g pack
•
Curd cheese 200g
•
Pine nuts 4 tbsp, toasted until golden
•
Basil a small bunch, shredded
Recipe
1.
Heat the oven to 190C/fan 170C/gas 5.
2.
Melt a knob of the butter in a pan. Add the
onions and a pinch of salt then cook, until the onions are very soft (this can
take 20 minutes).
3.
Melt the rest of the butter and use to brush a
shallow baking tray approx 30 x 40cm. Brush the sheets of filo with
butter then use to line base and sides of the tray, overlapping as you go.
4. Spread the onions over the base of the pastry then bake for 15-20
minutes or until the pastry is crisp and golden on the base and sides. Take out
the tart and leave for 10 minutes then top with spoonfuls of the curd cheese, a
few pine nuts and some shredded basil.
