fat-free buttermilk
1 large egg
white
2 tsp. hot
pepper sauce
4 skinless,
boneless chicken-breast halves (6 oz. each)
1 cup
cornflake-cereal crumbs
2 tsp.
paprika
1 tsp.
dried thyme
1 tsp. garlic
powder
Kosher salt
Nonstick
olive oil cooking spray
1. In medium bowl, whisk buttermilk,
egg white, and hot sauce until blended; add chicken-breast halves and turn to
coat. Let chicken marinate at room temperature. Preheat oven to 400°F.
2. Line baking sheet with nonstick
foil. In shallow pie plate or bowl, combine cornflake crumbs, paprika, thyme,
garlic powder, and 1 teaspoon salt.
3. Lift chicken pieces, one at a time,
from buttermilk mixture and coat in seasoned crumb mixture. Place on prepared
baking sheet. Lightly spray crumb coating with cooking spray.
4. Bake 16 to 18 minutes, or until
crumb coating is crusty and browned and juices run clear when thickest part of
chicken is pierced with tip of knife. Serve with Sautéed Spinach and Mashed
Potatoes, if you like .
