Ingredient

150g butter, at room temperature
·
¾ cup firmly packed brown sugar
·
2 eggs, at room temperature
·
3 overripe bananas, mashed
·
2 cups plain flour
·
1 teaspoon bicarbonate of soda
·
½ cup milk
·
1 banana, halved crosswise, each half cut lengthwise into 3
pieces

Caramel Sauce, to serve
Recipe
1. Preheat oven to
180°C/160°C fan-forced. Grease and line a 21cm x 10cm (base measurement) loaf
pan with baking paper,extending paper at long sides for handles.
2. Using an
electric mixer, beat butter and sugar in a bowl until light and creamy. Add
eggs, one by one, beating lightly after each addition. Add mashed banana; beat
until combined. Sift combined flour and bicarbonate of soda over banana
mixture. Add milk; stir until combined. Pour mixture into prepared pan; level
surface. Arrange sliced banana over top of mixture. Bake for 1 hour 10 minutes
or until a skewer inserted at centre comes out clean. Stand in pan for 5
minutes. Transfer to a wire rack to cool. Serve with Caramel Sauce.
