Fish Chowder

Ingredient

20g butter
·
1 onion, sliced
·
2 potatoes, chopped
·
2 tablespoons plain flour
·
3 cups fish stock
·
400g chopped white fish fillets
·
⅔ cup hot milk
·
¼ cup chopped flat-leaf parsley
Recipe
Melt butter in a heavy-based saucepan over low heat. Cook
and stir onion for 2 minutes or until soft. Add potatoes and stir in flour;
cook and stir for 1 minute or until bubbling. Add stock; simmer for 10 minutes
or until mixture thickens slightly. Add fish and milk; simmer for 4 minutes or
until fish is cooked. Add parsley. Season. Serve.
