Bacon, Lentil & Lemon Soup

Ingredient

2 teaspoons vegetable oil
·
2 bacon rashers, chopped
·
2 teaspoons grated lemon zest
·
1 tablespoon chopped
·
flat-leaf parsley
·
1 onion, chopped
·
2 potatoes, chopped
·
1 vegetable stock cube
·
400g can brown lentils, rinsed
·
1 tablespoon lemon juice
Recipe
Heat oil in a heavy-based saucepan over high heat. Cook and
stir bacon for 3 minutes or until brown. Transfer half the bacon to a bowl; add
zest and parsley. Cook andstir onion for 2 minutes or until soft. Add potatoes
and crumbled stock cube; cook and stir for 2 minutes. Add 3½ cups water. Bring
to the boil. Cook, covered, for 8 minutes. Add lentils; simmerfor 5 minutes.
Stir in juice. Serve sprinkled with zest mixture
