Ingredient

6 small white corn tortillas
·
400g can four bean mix
·
1½ cups cold Basic Savoury Mince
·
1 cup frozen pea, corn and capsicum mix
·
1 cup grated tasty cheese
·
35g sachet taco seasoning
·
6 eggs, at room temperature
·
⅓ cup sour cream
·
½ avocado, finely chopped
·
Coriander, to serve
Recipe
1. Preheat oven to
180°C/160°C fan-forced. Microwave tortillas on High (100%) for 30 seconds or
until soft. Press into 6 x 1-cup ovenproof bowls; place on a baking tray.
2. Combine beans,
Basic Savoury Mince, frozen pea mix, cheese and taco seasoning in a bowl. Spoon
mixture into prepared tortillas, making a small indent in mixture. Carefully
crack an egg into each indent.
3. Bake for 12
minutes or until mixture is hot and egg is just set. Serve topped with sour
cream, avocado and coriander.
