Coconut, Cranberry And Apple Granola

Ingredient

3 cups traditional rolled oats
·
1 cup quinoa flakes
·
²⁄³ cup seed mix (see note)
·
½ cup whole sliced almonds
·
¼ cup coconut oil
·
¹⁄³cup maple syrup
·
²⁄³ cup shredded coconut
·
1 teaspoon ground cinnamon
·
½ cup dried cranberries
·
¹⁄³cup chopped dried apple
·
Passionfruit yoghurt, to serve
Recipe
1. Preheat oven to
180˚C/160˚C fan-forced.
2. Place oats,
quinoa, seed mix, almonds, coconut oil, maple syrup, shredded coconut and cinnamon
in a large bowl. Mix well to coat. Transfer to a roasting pan.
3. Bake for 45
minutes, stirring every 10 minutes, or until golden brown. Stir in cranberries
and apple. Set aside to cool completely. Serve with passionfruit yoghurt.
