Pulled Pork Sliders With Cabbage Slaw

1½ cup barbecue sauce
·
1 tbsp chilli powder
·
¼ to ½ tsp cayenne pepper to taste
·
1 lean pork tenderloin (570g), excess fat trimmed; cut into three
equal pieces

1 red onion, sliced
·
6 tbsp non-fat plain Greek yogurt
·
2 tbsp apple cider vinegar
·
½ tsp kosher salt
·
½ medium green cabbage, shredded
·
3 tbsp sunflower seeds
·
12 wholewheat or multigrain rolls, split
·
Coriander leaves for serving

In medium Dutch oven or heavy bottomed pot, whisk together
barbecue sauce, chilli powder cayenne and one cup water. Add pork and half the
onion. Bring mixture to boil, reduce heat and simmer while covered for 60 to 90
minutes or until meat is tender and can be easily shredded with two forks.
Shred meat and keep warm.

In large bowl, whisk together yogurt, vinegar and salt. Add cabbage,
remaining onion and sunflower seeds, and toss well to coat.

To serve, arrange roll bottoms on large platter. Top with pulled
pork, cabbage slaw, coriander leaves and roll tops.
