Ingredients

Cooking spray
·
8 sheets pastry dough
·
8 hot dogs (about 270g), patted dry
·
½ tsp flake sea salt
·
½ tsp black pepper, freshly ground
·
¼ cup gherkins
·
Wholegrain mustard for serving

Preheat oven to 204 deg C. Lightly coat large rimmed baking sheet
with cooking spray.

Cut each pastry sheet into quarters to create 32 smaller sheets
(approximately 13cm by 18cm each). Lightly spray one rectangle with cooking
spray and, starting at narrow end, roll up hot dog, twisting ends of sheet to seal.
Repeat, adding three more sheets to hot dog. Then repeat with remaining hot
dogs and pastry sheets, lightly spraying each layer with cooking spray.

Transfer hot dogs to prepared baking sheet, lightly spritz tops
with more cooking spray; sprinkle with salt and pepper. Bake for 12 to 15 minutes
until golden.

Transfer to cutting board and cool for five minutes. With
serrated knife, cut each hot dog into three pieces and serve with gherkins and
mustard.
