Coconut, Cranberry And Apple Granola

·         Makes about 7 cups

·         Prep 10 minutes

·         Cook 45 minutes

Ingredient

·         3 cups traditional rolled oats

·         1 cup quinoa flakes

·         ²⁄³ cup seed mix (see note)

·         ½ cup whole sliced almonds

·         ¼ cup coconut oil

·         ¹⁄³cup maple syrup

·         ²⁄³ cup shredded coconut

·         1 teaspoon ground cinnamon

·         ½ cup dried cranberries

·         ¹⁄³cup chopped dried apple

·         Passionfruit yoghurt, to serve

 Recipe

1.    Preheat oven to 180˚C/160˚C fan-forced.

2.    Place oats, quinoa, seed mix, almonds, coconut oil, maple syrup, shredded coconut and cinnamon in a large bowl. Mix well to coat. Transfer to a roasting pan.

3.    Bake for 45 minutes, stirring every 10 minutes, or until golden brown. Stir in cranberries and apple. Set aside to cool completely. Serve with passionfruit yoghurt.

·         Nutrition: (per ½ cup) 1267kJ; 14.7g fat; 6.6g sat fat; 8.3g protein; 32.5g carbs; 4.7g fibre; 3mg chol; 29mg sodium.
