Chocolate self-saucing pudding

Ingredient

75g butter
·
½ cup milk
·
1¼ cups brown sugar
·
1¼ cups self-raising flour
·
¹⁄³ cup cocoa powder
·
1 egg, lightly beaten
·
100g dark chocolate, chopped
·
1¾ cups boiling water
·
Vanilla ice-cream and extra cocoa powder, to
serve

Preheat oven to 180°C/160°C fan-forced. Grease a
2-litre (8-cup-capacity) oval ovenproof dish.

Place butter, milk and ½ cup sugar in a saucepan
over medium heat. Cook, stirring,

Until butter has melted. Remove from heat.
Transfer to a large, heatproof bowl. Cool for 5 minutes. Sift flour and 2
tablespoons cocoa powder into bowl. Stir to combine. Stir in egg and chopped
chocolate.

Spread mixture into prepared dish. Place dish on
a baking tray. Sift remaining cocoa powder over mixture. Sprinkle with
remaining sugar. Pour boiling water, over the back of a large metal spoon, over
mixture.

Bake for 40 to 45 minutes or until the pudding
springs back when touched. Stand for 5 minutes. Sprinkle with extra cocoa
powder. Serve immediately with ice-cream.
