Shrimp & Green Apple Salad

Toss

·         12 oz. cooked shelled shrimp

·         1 sm. Granny Smith apple, cored and thinly sliced

·         ½ seedless (English) cucumber, thinly sliced

·         3 Tbsp. orange juice

·         2 Tbsp. extra virgin olive oil

·         1 tsp. hot pepper sauce (such as Tabasco);

Arrange: on two dinner plates, sprinkle with ¼ tsp. each salt and pepper, and, if desired, garnish with 2 Tbsp. toasted pine nuts.

Makes: 8 servings

·         ¼ c. sliced almonds

·         1¼ c. granulated sugar

¼ c. sliced almonds

¼ c. sliced almonds

·         1 Ig. egg

·         2/3 c. whole milk

·         1½ tsp. almond extract

·         1¼ c. all-purpose flour

·         ½ tsp. baking powder

·         ¼ tsp. salt

·         ½ c. butter or margarine (1 stick), melted and cooled slightly Whipped cream and/or fr閶sh fruit, for serving

1.  䦼  Preheat oven to 350°F. Spray 10-in. quiche pan or fluted cake pan with nonstick cooking spray. Sprinkle almonds in bottom of pan.

2.    In med. bowl, with mixer on med. speed, beat granulated sugar, egg, milk, and almond extract until smooth, scraping bowl with rubber spatula as needed. Beat in flour, baking powder, salt, and melted butter until just combined.

3.    Pour batter into prepared pan. Bake 40 to 50 min. or until edges are golden brown and toothpick inserted in center of cake comes out clean. Cool completely in pan on wire rack. Cake can be stored at room temperature, well-wrapped, up to 3 days. To serve, place cake almond side up on serving plate. Serve with whipped cream and fruit, if desired.

Each serving: About 335 calories, 4 g protein, 48 g carbohydrate, 74 g total fat (8 g saturated), 7 g fiber, 56 mg cholesterol, 155 mg sodium.
