1 cup
chopped onion
5 Tbsp.
cider vinegar

chicken (4 ½ to 5 lb.), wing tips cut off, skin removed
¼ cup
yellow mustard
2 Tbsp. chopped
fresh flat-leaf parsley

In 6-quart slow-cooker
bowl, combine onion, 4 tablespoons vinegar, garlic, and brown sugar. Spread
whole-grain mustard all over chicken. Place chicken, breast-side down, in
slow-cooker bowl. Cover slow cooker with lid, and cook as manufacturer directs
on low setting 5 to 6 hours, or until chicken is fork-tender. Remove chicken to
cutting board; let stand 5 minutes.

Pour braising liquid
from slow cooker through fine sieve set over 1-quart measure. Transfer onion
solids from sieve and ½ cup braising liquid to large bowl. Add remaining 1
tablespoon vinegar, yellow mustard, parsley, ½ teaspoon salt, and ½ teaspoon
freshly ground black pepper to onion mixture and whisk together.

Shred chicken into
large pieces. Add to dressing; toss. Serve on toasted buns with coleslaw, if
desired.
