cloves, peeled
5 sprigs
fresh rosemary
8 rib lamb
chops, 1 inch thick (about 2 lb.), well-trimmed

In large skillet on
medium-high, heat oil, garlic, and rosemary. Cook 1 minute, stirring
constantly, to season and prepare pan; then discard oil, garlic, and herbs.

Sprinkle lamb chops
with ½ teaspoon kosher salt and ¼ teaspoon freshly ground black pepper. Place
in same skillet and cook 3 to 4 minutes per side, or until medium rare.
Transfer to platter and cover to keep warm.

Pour off pan drippings.
Increase heat to high, add wine to pan, and stir about 3 minutes, scraping up
brown bits, until liquid is reduced to ½ cup. To serve, place 2 lamb chops on
each plate and drizzle with sauce. Serve with Quick Mashed Potatoes and Lemony
Broccoli.
