In a 2,8-litre saucepan, whisk milk, sugar, cinnamon, cayenne pepper, salt and cream to blend. Heat on medium until bubbles form around edge. Add 110g of the chocolate and whisk until melted. In a large bowl, whisk eggs until blended. Continue whisking while adding hot chocolate mixture in a slow, steady stream.

To make the pastry, sift the flour into a food processor, add the butter and pulse briefly to a crumb texture. Add the chilled water through the feeder tube and pulse until the dough forms a ball, adding a little more water if necessary. Wrap in cling film, flatten slightly and chill in the fridge for 30 min.

Pour enough water from kettle into roasting pan to come halfway up sides of ramekins. Cover pan loosely with foil. Bake custards for 25 to 30 minutes or until knife inserted halfway between edge and centre of custard comes out clean.
